Hi! I have a question abt the muffin pan. Is it ok to pour the mixture directly to the muffin pan or it should be pour into those small muffin paper 'cup'?

    TIA

    you can do either
depends on whether it's the normal pans or the nonstick pans.
either way, it's probably a good idea to v lightly oil the bottoms of the pan

littlemiss, think it's alright to pour directly into the muffin pan. As long as you coat pan with oil first.

For teflon coated muffin pans (those that are dark brown in colour), I don't even bother to coat them with oil or butter. Just pour the batter into the pan. It will not stick so long as the muffin is thoroughly cooked

What are some good brands of ready-mixes?

There are so many kinds out there, it's difficult to know which are the ones which really deliver what they promise.

Try the B1 of Takashimaya dept store, near the KFC where all the kitchen ware/bakery items are. They have really nice small sized springform pans, either 6" or 8". Japanese made though, so they are more expensive, around $20 iirc.
