hello! i bought a tub of mascarpone cheese but used barely less than half of it. it's the Granarolo preservative free mascarpone which is readily available at NTUC. within how long should it be consumed/thrown out after opening? it's been in the fridge a week.... T.T the package doesnt indicate anything aside from the expiry date. there was some whey, but i think whey is pretty harmless and i just drained it out of the tub.

Use it soon, cos when opened the freshness of mascarpone can last only maximum a week.

I love cornflake cookies the most, best if it has raisins in it. My auntie bakes that every year, tins of it. But as her health is no longer that good, she has stopped production for a year. Anyway, this is the recipe to share with all cornflake lovers.

    200g butter
    150g sugar
    2 eggs
    300g flour
60g bran or cereal ( coarsely crushed )
    1 tsp vanilla essence
    30g corn flour/corn starch

Beat butter and sugar till pale and creamy. Add vanilla essence, stir in the lightly beaten eggs. Fold in the flour mixture including corn flour. Using an ice cream scoop, scoop out about one teaspoon of the cookie dough and roll it into the crushed cornflakes. Transfer them to a baking tray lined with parchment paper and bake for 25 minutes at 350 degree F or till golden brown.
